2 pounds fresh conch, removed from shell1/2 fresh pineapple - peeled, cored and chopped1/2 cup water2 lemons, juiced1 cup chopped fresh cilantro1 medium onion, chopped1 medium tomato, chopped (optional)salt to tasteTrim and peel the conch, and cut into small cubes.
