Vegetarian Chili with Kidney Beans, Black Beans and Rye Berries

Perhaps I should call this dish "Fire in a Bowl". I drafted this recipe on a chilly afternoon and when I got to making it, well, I guess I was quite liberal with the spices and chilies. Writing up the recipe here, I have adjusted the ingredients, but of course feel free to cut down on the heat according to your preference. It was delicious and warming all the same, with a wonderful added chewy texture from the cooked rye berries. Fresh herbs certainly add a bit of flare to dishes like this, but dried herbs will work just fine too. Serve with some yogurt and sprinkle with some fresh grated Cheddar cheese as desired. This fusion-style Mexican-Indian dish also goes well with homemade tortilla chips.

Rich, hearty, warming and nourishing spicy vegetarian chili with kidney beans, black beans, rye berries, vegetables and fresh herbs

Ingredients:
  • 1/2 cup dried red kidney beans
  • 1/2 cup dried black beans
  • 1/2 cup rye berries
  • 1 tablespoon olive oil or sesame oil
  • 1 medium onion, chopped
  • 3 dried whole red chilies, broken into pieces
  • 3 to 4 red or green chilies or jalapeños, seeded and finely chopped
  • 2 cloves garlic, crushed or minced
  • 1-inch piece fresh ginger, grated or minced
  • 2 medium carrots, sliced
  • 5 cups water
  • 6 sun-dried tomatoes
  • 2 medium tomatoes, finely chopped
  • 2 teaspoons chili powder
  • 1 teaspoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne
  • 1/4 teaspoon asafetida (optional)
  • 1 tablespoon tamarind paste, seeds removed (optional)
  • 2/3 cup frozen corn
  • 1/2 cup fresh parsley, chopped
  • 1 tablespoon fresh oregano, finely chopped (1 teaspoon dried)
  • 1 tablespoon fresh thyme, finely chopped (1 teaspoon dried)
  • 1 1/2 teaspoons sea salt, or to taste
  • fresh ground black pepper to taste
Instructions:
  • Rinse the beans and rye berries and soak in several inches of water for 8 hours or overnight. Drain and rinse, and set aside.

  • In a large saucepan, heat the oil over medium heat. When hot, add the onion, dried and fresh chilies or jalapeños, garlic, ginger and carrots, and stir for 3 to 4 minutes to soften the onions. Add the soaked beans and rye berries and pour in the water. Bring to a boil, reduce the heat to medium-low, cover, and simmer for 1 hour or until the beans are tender. Stir occasionally and add more water if necessary.

  • Meanwhile, soak the sun-dried tomatoes in hot water for 20 to 30 minutes, then drain and chop.

  • When the beans are tender, stir in the sun-dried tomatoes, fresh tomatoes, spices and tamarind paste to the pot, and continue to simmer for another 20 minutes. Toss in the corn, simmer for 5 minutes, and then add the parsley, oregano and thyme. Simmer for another few minutes, and then remove from heat and season with salt and pepper. Serve hot.

Makes 6 to 8 servings

Think of this creamy dish as a vegan alternative to chicken noodle soup. Here chicken stays on the farm, where it belongs, and succulent and earthy mushrooms are the meaty component. Throw in some fresh bean sprouts and some rice noodles and you have a silky, comforting bowl of soup to be enjoyed anytime of year.

The recipe I present here is pretty faithful to what I did in the kitchen, but the quantities are rather approximate because there is always room to add more or less of what you desire. Cooking is not an exact science but a work of art in progress and each dish should be approached with a view to satisfying your culinary urges and well being.

Thick, creamy and comforting mushroom soup with gentle Thai flavors and coconut milk

Ingredients:
  • 1/2 oz (14 g) dried mushrooms
  • 1 1/2 cups hot water
  • 2 tablespoons olive oil
  • 2 shallots, sliced into small rounds
  • 1-inch piece fresh ginger or galangal, minced or grated
  • 1 medium carrot, diced
  • 1 stalk lemongrass, trimmed and cut into strips
 
  • 3 cups fresh mixed mushrooms (I used enoki, button and oyster), sliced
  • few generous handfuls of bean sprouts
  • 3 1/2 cups (2 14 oz or 400 ml cans) coconut milk
  • 2 to 3 cups vegetable stock or water
  • 1 tablespoon tamari (soy) sauce
  • 1 to 2 teaspoons sweetener (optional)
  • a few pinches of paprika
  • 2 tablespoons Thai red curry paste, or to taste (recipe below)
  • handful of kaffir lime leaves (optional)
 
  • 1 1/2 to 2 cups uncooked rice noodles
  • juice from two limes (3 tablespoons)
  • generous handful of fresh parsley
  • 1 teaspoon sea salt, or to taste
  • fresh cracked black pepper to taste
  • 2 scallions, trimmed and chopped for garnish
Instructions:
  • Soak the dried mushrooms in the hot water for 20 minutes. Drain, reserving the soaking liquid, and chop.

  • Heat the oil over medium-heat in a large heavy-bottomed saucepan. When hot, toss in the shallots, ginger, carrot and lemongrass and stir for a few minutes.

  • Turn up the heat to medium-high and add the fresh and dried mushrooms to the pan. Stir for a few minutes until the mushrooms begin to release their juices. Add splashes of the reserved mushroom soaking liquid to the pan to keep the vegetables and mushrooms from sticking.

  • Now add a portion of the bean sprouts, stir, and pour in the coconut milk, the remaining reserved mushroom soaking liquid and 2 cups of the vegetable stock or water. Stir in the tamari, sweetener if using, paprika, curry paste and lime leaves if using. Reduce the heat to medium and simmer for 10 to 15 minutes, stirring often, until the soup begins to thicken. Add more bean sprouts to the pan, stir and simmer for another minute or so.

  • Now stir in the rice noodles, turn off the heat and cover the pan. Let stand for 10 minutes. Discard the lemongrass and add more vegetable stock or water as desired. Stir in the lime juice and parsley and season with salt and pepper. Taste for seasoning and stir in more curry paste if desired. Serve piping hot in bowls and garnish with the scallions and a few bean sprouts.

Ingredients:
  • 10 large dried red chilies, broken into pieces
  • 2 teaspoons coriander seeds
  • 1-inch piece fresh galangal or ginger, chopped
  • 1 stalk lemongrass, trimmed and finely chopped
  • 1 large clove garlic, finely chopped
  • 2 - 3 shallots, finely chopped
  • 1 teaspoon sea salt, or to taste
  • 1/2 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • zest from 1 lime
  • juice from 1 lime
  • water as needed
Instructions:
  • Using a large mortar and pestle, pound together all of the ingredients until a fairly thick paste is formed. For the sake of convenience you may wish to use a food processor. Add some water to achieve your desired consistency.

  • If you want a thicker paste than the version I made here, use less lime juice or omit it entirely and opt for the mortar and pestle method. I found the lime juice worked well combined with some grated zest. Fresh kaffir lime leaves and peel as well as fresh lemon basil leaves are a fragrant addition to the paste and can be used in place of the lime.

Makes about 1 cup

I gave my new bride the book to take home and ordered two more - one for each DIL.

My whole family agreed and if the first onei tried is any indication of the rest of the book, then this is one of the only book on apitzers you'll ever need.

1 pound pork sausage2 pounds ground beef1 small onion, chopped1 dash garlic salt4 (14.5 ounce) cans diced tomatoes, drained1 (10 ounce) can diced tomatoes with green chile peppers, drained1 (14 ounce) package uncooked instant rice6 large green bell peppers1 cup grated Asiago cheeseIn a skillet over medium heat, cook the sausage, beef, and onion until sausage and beef are evenly brown and onion is tender. Season with garlic salt. Drain grease. Mix in 2 cans diced tomatoes and 1 can diced tomatoes with green chiles. Reduce heat to low, and simmer 15 minutes. Prepare the rice according to package directions. Preheat oven to 375 degrees F (190 degrees C). Cut the peppers in half lengthwise, retaining stems, and remove seeds. Arrange pepper halves in a baking dish, and fill each with about 1/3 cup rice. Top with equal amounts of the meat mixture. Pour remaining meat mixture and remaining 2 cans diced tomatoes around the peppers in the dish. Bake 45 minutes in the preheated oven, or until bubbly. St. Patrick's Day: Irish Brown Soda Bread

4 cups whole wheat flour1 cup bread flour1/3 cup rolled oats1 teaspoon baking soda1 teaspoon salt2 1/2 cups buttermilkPreheat oven to 425 degrees F (220 degrees C). Lightly grease two baking sheets. In a large bowl, stir together whole wheat flour, white flour, rolled oats, baking soda and salt. Gently mix in the buttermilk until a soft dough is formed. Knead very lightly. Divide dough into 4 pieces; form into rounded flat loaves. Mark each loaf with an 'X' and place on prepared baking sheets. Bake in preheated oven until golden brown, about 30 to 45 minutes. Even on asuper crowded day {I mean seriously crowded… the most crowded I have ever seenit!}, my family was able to walk around, explore, and enjoy this attraction toour hearts content. This was a great way for our family to spend Martin Luther King Day!

Pregnancy week 18
BabyDevelopment: Head to rump, my baby isabout 5 1/2 inches long and weighs almost 7 ounces. It is able to flex botharms and legs. The ears are now in their final position even though they arestill standing out a bit from the head. A protective covering of myelin isbeginning to form around his nerves, a process that will continue for a yearafter he's born.
If the baby is a girl,her uterus and fallopian tubes will be formed and in place at this point intime. If I’m having a boy, his genitals will be noticeable now in an ultrasound.
Pregnancy week 18
Symptoms:Ihave discovered that I get worn out really quickly when I do certain thingslike carry my toddler up the stairs. I really need to stop doing that.Especially since he is going to be turning 2 in April and weighs almost 30lbs.{I know… bad mommy}
I get little bursts of energymid-morning and mid-afternoon and then - nada – for the rest of the day. I willbe starting a new workout routine very soon with Moms Into Fitness and I am hoping that will help out with my energylevels.
Currentlycraving: Iam having no real cravings this week. This is a nicechange of pace for this pregnancy. 
CurrentlyAvoiding: Nothingis setting me off right now, hooray!
Bellybutton status: In.
Movement: Feeling little movements every once ina while. No real kicking or rolling just yet.
Names: Weare waiting to find out the gender of the baby before we announce the name. Butwe do have both picked out, so we will happily welcome either a little girl ora little boy. We find out next week what we are having!!!!!!!
Anyappointments?: Genderreveal ultrasound next week and regular checkup two weeks after that.   
Anybaby related purchases?:Not yet.
Other: I played around in the new nursery this weekand even tried my hand at a little organization for the closet. I did this whenmy boys were home and awake and they thought that this was a fabulous idea. Mylittle guy loved mommy taking out the infant car seat, the bouncer, and thebassinet… because they were wonderful toys for him to climb on/in and playwith. Kid Craft Failure: The not so PUFFY paint.

Ishare the good, the bad, the successes, and the failures here. This week ourKid Craft was a HUGE failure. Seriously. Have you seen the picture of the CookieMonster Cupcake pin on Pinterest where the original pin is super cute and thenthe attempt to make the pin was a disaster… that was this week’s craft.

Thisgoal of this week’s kid craft was to work with texture and have some creative freedom.The kiddos and I got crafty in the kitchen with some ingredients and *poof* wemade paint! But not just any old paint would do. Nope, we attempted to make ourvery own puffy paint. It did not puff.This craft we will need to be attempted again with some major alterations tothe recipe.

Igot this craft recipe off of Pinterest - as severalposts had the ingredients of 1 cup flour, 1 cup salt, and 1 cup water listed asthe correct puffy paint mixture. Silly me, this is the recipe we used to tryand make out puffy paint. DO NOT USE THIS RECIPE IF YOU ACTUALLY WANT YOURPUFFY PAINT TO PUFF. Our paint came out soupy and grainy.

Iwas very into the presentation and the idea of using old school ketchup andmustard containers to hold our paint. These containers were less than a dollara piece at Walmart and I am sure you would be able to locate them at othercraft stores like Joann Fabrics, Michael’s, or Hobby Lobby. I just happened tofind them on the cheap at Walmart. Since the paint itselfturned out to be such a dud, the squeezing of the paint containers was what turnedout to be fun for my children. They really liked squeezing those bottles.

Baby monitors have come a long way in a shortamount of time and I could not be more impressed with the thoughtand innovation that companies are putting into their products. I am specificallyreferring to the Motorola Digital Baby Monitor.

Theshort version of why I am such a fan of this monitor is quite simple. It doesit all. It has video capabilities, audio capabilities, zoom capabilities, comeswith a rechargeable battery, and can be used day or night. It is user friendlyand in all honesty – I think it’s really just fun to play with! Right now Ihave one camera in my preschooler’s room and one camera in my toddler’s room. Ihave a lot of fun just seeing what the kids are up to in their rooms when theythink no one is looking.


WhenI had my first child in 2009 we received an audio only baby monitor as part ofour registry. When baby number 2 came around we upgraded to a single camera videomonitor. And now that baby number three is coming we are upgrading once againto a double camera digital video baby monitor that has all the bells andwhistles and is easy to use!

  • I am a HUGE fan of the fact that the MotorolaMBP36 Remote Wireless Video Baby Monitor can remotely pan, zoom, and tilt. Thismeans that I can change what the camera is looking at from wherever I am in myhome. I can zoom in and out while sitting on my sofa. I do not have to bestanding in the nursery playing with the camera trying to get the perfect angle…and if the kids touch the camera {which they did}, I can easily change it backto the position I want it without physically touching the camera. And it makesno noise when in motion.
  • It comes with a rechargeable battery for theparent unit. You plug it in, charge it up, unplug it and go! It comes with a NiMH rechargeable battery pack, so there is noconstant need to replace the batteries and when it is charged you can use theparent handheld unit wirelessly. When used wirelessly the wirelesstransmissions are digitally secure and safe from unauthorized access.
  • It is reallyeasy to use. There is a menu button that displays the volume control, thecamera brightness, the five lullaby options that can be played, the zoomcapabilities, the alarm options, the camera display, and the temperaturedisplay. There are five LED lights located at the top of the monitor so that displaysthe noise level. Displayed on the screen is the range {this camera goes up to590 ft}, the camera being viewed, the temperature, if night vision mode isbeing used, and the battery charge. There is a little kickstand located on theback and as well as an antenna {although we never needed to use the antenna}.
  • Did Imention that this monitor can work as a two way communicator- meaning that withthe touch of a button I can speak to my toddler who is holding the camera andtell him to put it down. This was a big hit in my household. My kids think itis pretty cool that mom can see what is going on and talk to them even when notin the room.
  • The parentunit has a 3.5” diagonal LCD screen display {roughly the same size as myiPhone4 screen} and it provides a clear color picture. I can easily see mychildren with this monitor; there is no squinting at the monitor to see and nosecond guessing what is being displayed. It is also a very light unit to carryaround.
  • When innight vision mode, the light displayed on the camera unit is not incrediblybright. This means that the light is not keeping my children awake at night andI am still able to get a clear picture of my child sleeping.

Assoon as baby #3 arrives one of the cameras will go into the new nursery and theother will remain in my toddler’s room as he transitions from a crib to atoddler bed. He is still little enough that I feel the need to have a monitorremain in his room. I love that the Motorola MBP36 Remote Wireless Video Baby Monitor can come with onecamera or two and has the capability of supporting up to four cameras.

This is the part of my review where I suggestways in which to improve on the product from a real mother’s perspective. But Icould not find any fault with this product. I feel like Motorola really didtake the time to think of everything when they made this monitor. I have heardothers complain that there is no belt clip, but I never used one on any of myother baby monitors and don’t believe I would use one now. I would highly recommendit to anyone in need of a video monitor. In fact, I have already suggested itto my sister-in-law for her baby registry.
